To just relax, unwind and let the breeze run through your hair?

That’s what today’s super easy homemade mango ice cream recipe is all about: letting yourself unwind, relax and just let that tropical summer breeze run through your hair. Or at least taste like it. In your mouth, not your hair. Oh, you know what I mean.

A long time ago, I started associating mangoes with the tropics and the tropics with relaxation, sunshine, and happiness. So you will join me in making, then scooping up two big scoops of this homemade mango ice cream, then enjoying the tropical flavors and just… relaxing? 🙂

Just as I wish for you to have a moment to yourself that’s as easy and gentle as a warm summer’s breeze, did I design this recipe to be as easy to make. As the warm summer’s breeze. Oh, you get it.

I originally shared this healthy mango ice cream recipe back in June 2017, and ever since, it’s been one of your go-to Beaming Baker ice cream recipes. Today, we’re gonna whip up a batch of freshly made, homemade mango ice cream and just chill.

3 Ingredients for this Healthy Mango Ice Cream Recipe

All you need are 3 simple, whole ingredients to make this healthy mango ice cream recipe:

  • Ingredient #1: Mangoes
  • Ingredient #2: Full-fat Coconut Milk
  • Ingredient #3: Pure Maple Syrup

You can even skip the pure maple syrup if you’re using extra ripe and sweet mangoes. Just know that either way, this homemade mango ice cream is still vegan, paleo, healthy and dairy-free.

How to Make Mango Ice Cream

Learn how to make fresh mango ice cream with me in just 3 easy steps.

  1. Add mangoes to a food processor and blend until crumbly.
  2. Add coconut milk and maple syrup, then blend until smooth and creamy.
  3. Pour mixture into a freezer-friendly container and chill until firm and scoopable. Enjoy!

Homemade Mango Ice Cream: this 3 ingredient mango ice cream recipe is super EASY! 5 mins of prep for the best mango ice cream: rich & creamy with big mango flavor! Vegan, Dairy-Free, Healthy.

  • 3 cups frozen mangoes
  • 1 can full-fat coconut milk (13.66 oz.)*
  • 1 tablespoon pure maple syrup (optional)

Instructions

  1. Add mangoes to a blender or food processor. Blend until crumbly.
  2. Add coconut milk and maple syrup, if using, blending until smooth. Scrape down the sides of the blender as needed.
  3. Pour into a freezer-friendly, airtight container. Freeze for 3-6 hours, or until completely frozen. Allow to thaw for 20-60 minutes before scooping—this treat can take a while to thaw.** Enjoy!

  2. Totally delicious, thank you! I used a lot more than 1 T maple syrup (the frozen mango chunks I bought weren’t very sweet/ripe, plus I have a sweet tooth ;)), and I added a tiny pinch of salt. So refreshing, so creamy, pretty healthy, and so easy!!

  3. Great recipe, thank you.

    As a trick, I also take some pure mango puree from cartons and reduce that by as much as you can before it gets too dark, it has consistency when it gets cold, I’d also fold a little aquafaba through it before I freeze it.

    Treat these reduced vegan fruit stock cubes as flavorings some like apple juice you can reduce X5. I just seem to tolerate the reduced fruit rather than other sweeteners.

  5. I know this recipe is supposed to contain just 3 ingredients, but I wanted to change it up a bit. I didn’t have enough frozen mango, so I added frozen peach. Then, instead of syrup, I used a good 1/3 cup honey (which I felt added depth of flavor), about a 1/2 tsp salt (I believe salt is important to balance the sweet), and a 1/4 tsp cardamom. It was awesome! An explosion of complex flavors. But I loved the simplicity of the base recipe. Thanks!

    Is it possible to churn the mixture in a sorbet/ice cream maker, so that it doesn’t need to be to thawed for 20-60 minutes before it can be enjoyed?

    1. Hi Liz, great question! I do believe churning will make it lighter & fluffier, but it may still take a while to thaw (but perhaps less.) Let me know if you try!

  19. Can I substitute almond milk for the coconut milk? SO trying to recduce calories.

    1. Hi Susan! The full-fat coconut milk in this recipe is what males the sorbet creamy, and it’s actually a totally different kind of milk than almond milk. You could try using a can of lite coconut milk, but the sorbet will have a different consistency (might be more icy). Hope this helps!
