All-purpose gluten-free baking flour- Use the gluten-free flour of your choice or our flour blend. I also like to use Bob's Red Mill All Purpose Gluten-Free Flouror King Arthur Measure for Measure Flour.

Xanthan gum- Xanthan gum is a sugar derived from corn. Some gluten-free flour has it added in already. So, check the ingredient label, and only if needed, add 2 teaspoons.

Eggs - I like to use 3 large eggs. Egg sizes do vary, so you may need to add 1 more. Eggs are crucial in the making of pasta for so many reasons. Eggs are a nutritional powerhouse, offering a range of health benefits. They are an excellent source of high-quality protein, essential vitamins like B12, selenium, iron, and other nutrients.

Equipment To Make Homemade Gluten-Free Noodles

Rolling pin - If you don’t have a rolling pin, use a wine bottle.

A sharp knife or pizza cutter - The key is a nice, serrated blade to cut through the grain-free pasta dough easily.

Pasta machine(optional) - A pasta machine (pasta roller) is not required, but if you have one, feel free to use it.

How To Make Gluten-Free Fresh Pasta

  1. Mix the gf flour and xanthan gum (if required). Add in the eggs (you can try an egg replacer).
  2. Mix ingredients well using a fork. Once you’ve reached the desired consistency, knead the dough for 2-3 minutes. This is to ensure there are no clumps of flour. TIP: If it’s too sticky, add more flour; if it’s too dry, add egg or a few teaspoons of water.
  3. Roll the dough into a ball.
  4. Cut the dough into quarters.
  5. Roll each of the quarters out into a triangle shape and make it the length of spaghetti.
  6. Fold each triangle in half on the shorter end.
  7. Cut the dough into the desired thickness.
  8. Toss it in flour and shape it into nests. You can dry them out now or cook them.
  9. Cook the fresh gluten-free pasta in boiling water for 4-8 minutes with a few pinches of salt. To cook dried-out pasta, increase the time to 6-10 minutes. These cooking times are a guide, depending on how al dente you like your pasta.

Add Xanthan gum - Xanthan gum is a powerful addition to your pasta dough. It makes the grain-free pasta flexible and elastic, so you have a chewy texture. It also prevents the pasta from being crumbly.

Knead the dough enough - Ensure you knead the dough enough so you don’t have any flour clumps. You don’t need to knead it for too long.

Sticky dough - If your dough feels a bit sticky, add a bit of all-purpose gluten-free flour until you reach the desired texture.

Dry dough - If your dough is too dry, add egg or a few teaspoons of water.

How Do I Make This Pasta With A Pasta Machine?

Size it Right - Begin by shaping your dough into a size that snugly fits into your pasta machine's slot.

Start Wide And Then Go Narrow - Your pasta machine is a versatile tool with settings that range from wide to narrow. Initially, set your machine to its widest opening.

Adjust Gradually - Once you've rolled your dough through the widest setting, it's time to reduce the thickness. Gradually adjust the machine to narrower settings with each pass. This step is where you customize your pasta.

Match the Pasta Type - Remember that the ideal thickness depends on the pasta you’re making. We use the spaghetti attachment for this recipe after getting the pasta to the desired thickness. So we then run it through the spaghetti attachment, and it is ready to be cooked or stored for later use.

These directions depend on what type of pasta machine you have and what type of pasta you are making, so consult the instructions that come with your pasta machine. I have used a manual pasta machine.

Instructions

  1. In a large bowl mix the flour with the xanthan gum, if using.
  2. Make a well in the middle of the flour and add the eggs. Mix well using a fork until all the ingredients are combined and you have a slightly sticky pasta dough. If the dough feels too dry you can add one more egg or a couple of tablespoons of water until you reach the desired consistency. If the dough is too wet add a little bit more gluten-free flour.
  3. Knead the dough on a floured surface for 2-3 minutes until you get a smooth ball of dough. There’s no gluten to be formed so you don’t need to knead the dough for too long, but the kneading ensures that you break apart lumps of flour if any.
  4. Then cut the dough into quarters and roll it out one at a time with a rolling pin. Roll it out into a loose rectangular shape that should be as long as a piece of spaghetti.
  5. Then fold it up starting with one of the shorter ends and then slice the dough according to how thick you want your pasta to be. And once you unroll it you have your pasta strands. Toss the pasta in some flour and shape them into nests. You can let the pasta dry,or you can cook it straight away in boiling salted water for 4-8 minutes.
  6. Toss your pasta in your favorite gluten-free pasta sauce and serve.

Notes

  • Check if your gluten-free flour contains xanthan gum. If not, then add 2 teaspoons. The xanthan gum will give your pasta a nice chewy texture and prevent the pasta from being too crumbly.
  • If you have a pasta machine, simply roll out the dough and then pass it through the pasta machine. Toss the shaped pasta through some flour and shape it into a nest.
