Ingredients

  • 12 jalapenos
  • 8 oz cream cheese (softened)
  • 1 cup cheddar cheese (shredded)
  • 12 egg roll wrappers
  • 6 tbsp olive oil
  • ½ cup ranch or jalapeno ranch dressing (optional side for dipping)

Step by step instructions

Turn the broiler on the oven to high.

De-stem and de-seed the jalapenos. I use the toolyou see belowto easily core the jalapenos.

Place the jalapenos on a baking sheet.

Place in the oven for 8-10 minutes, turning half way through. Remove when the jalapeno skins are black and bubbling.

While the jalapenos are roasting, combine the cream cheese and cheddar cheese in a large ziploc bag.

Cut a small hole in the corner of the bag and pipe this mixture into the roasted jalapenos.

Place an egg roll wrapper on a work surface with one corner pointing towards you, place the filled jalapeno in the middle of the wrapper.

Using your finger, brush the edges with water.

Fold thecorner closest to you over the jalapeno, and tuck.

Fold the sides in.

Roll tightly, set aside and repeat with remaining jalapeno popper egg rolls.

Place app. 2 tbsp olive oil in a skillet, swirl the oil in the skillet making sure there’s oil covering the entire bottom of the skillet.

Heat the oil over medium-high heat, then add 4-5 egg rolls to the skillet, depending on how big your skillet is.

Cook for 3-4 minutes, flip and cook for an additional 3-4 minutes on the opposite side.

Remove from the skillet. Add more olive oil before cooking the next batch, making sure the bottom of the skillet is always covered in oil.

Serve with ranch dressing, or for an extra kick, jalapeno ranch dressing, on the side for dipping.

The crispy egg roll exterior paired with the spicy roasted jalapeno, filled with the creamy, cheesy center, makes for one delicious jalapeno popper egg roll!

Any extra water will result in your Egg Rolls being soggy and dark spots forming on your Egg Roll wrappers. The #1 culprit for watery filling is usually the rehydrated noodles. Peanut oil is great for frying egg rolls as it has a high smoking point and provides a nutty flavor. If you don't have it on hand, you can use canola or corn oil. Do not use oils like sesame oil or olive oil, as they are not good candidates for deep-frying due to their low smoking point.

Why do you put peanut butter in egg rolls? ›

Peanut butter has been in my egg rolls ever since. The peanut butter adds a nutty, delicious and creamy flavor that you will love. It is a great addition to the ground pork.

What to use to seal eggrolls? ›

Flour paste. Mix flour with water and a bit of salt. Go for a thick glaze-like consistency, and use it instead of the egg. Give it at least 10 minutes to hold before frying, and try to hold the edges closed with tongs when initially frying.

Should I freeze my egg rolls before cooking? ›

According to Purdue University, a trivet in the microwave keeps items like egg rolls as well as pizza and sandwiches dry. Reheat on high for 30 seconds (longer if they've been in the fridge), flip, and reheat for another 15 to 30 seconds, until heated through, trying not to lose too much crunch.

How to make non-soggy egg rolls? ›

To ensure crisp egg rolls, always make sure the frying oil gets back up to proper temperature between each batch. Putting a fresh batch in too early can lead to soggy egg rolls. What if the egg roll filling is too wet? ›

After stir-frying, if there seems to be too much liquid in the filling, drain some of it out. While wrapping the rolls, prop the bowl containing the filling in a tipped position so that the liquid is concentrated at the bottom of the bowl (and not in the filling).

Watery? Don't add water. Seriously, just whisk your eggs together, then scramble on low to medium heat in the pan, taking them off the burner when they start to firm up, whisk, then back again, off, on, off, on. Keep doing that until they have the consistency you want.
