Dec. 26—Four restaurants and a grocery store in Wichita were out of compliance during food safety and lodging inspections conducted by the Kansas Department of Agriculture last week. Their problems included co*ckroaches in food preparation and storage areas, an employee who handled a customer's food with her bare hands, leaks, no hot water at hand-washing sinks and food that was temperature non-compliant, according to inspection reports.
Information about the five businesses and a summary of their violations appears below. The list was compiled Dec. 21 and includes inspections conducted in Sedgwick County from Dec. 10-16.
More than 40 establishments passed inspections last week. They also appear below. Some may have been non-compliant previously.

How establishments fail
Most violations are minor and are corrected during an inspection.
Businesses fall out of compliance when they have too many violations, issues that can cause foodborne illnesses or when a problem can't be fixed right away, like bug and rodent infestations. Typically, establishments are re-inspected within 10 days.
It's rare for a facility to shut down over a failed inspection, but it can happen due to things like sewage backups, pest problems, water or power outages. Usually, closures are temporary.

Out-of-compliance inspections
Aldi, 8011 E. Kellogg in Wichita — One violation on Dec. 12 during a routine inspection. The water at the bathroom sinks wasn't hot enough. Next inspection: Dec. 22.
The Easy Egg, 5700 W. Kellogg Drive in Wichita — Five violations on Dec. 12 during a modified complaint inspection. Large hole in a wall by dish and sink areas and several areas where the wall is damaged and pulling away from the building can be a hiding place for co*ckroaches, several dead co*ckroaches throughout the restaurant including under cooking equipment and by hand-washing sink, one co*ckroach was on its back "kicking his legs," no glue traps to catch pests in the kitchen, grease and grime under the grill and fryer. Next inspection: Dec. 22.
Krispy Kreme, 7777 E. Central in Wichita — Two violations on Dec. 13 during a routine inspection. No backflow preventer at the two-vat sink at the coffee station, water wasn't hot at hand-washing sinks throughout the restaurant, including in kitchen and bathrooms. Next inspection: Dec. 23.
Los Mexican Burritos, 1710 S. West St. in Wichita — Nine violations on Dec. 12 during a routine inspection. Containers of salsas and meats weren't labeled with preparation dates, flautas and fried tacos also weren't dated, a bottle of degreaser wasn't labeled, no chlorine test strips for checking sanitizer concentration, an employee touched ready-to-consume taco tortillas with her bare hands, a hand-washing sink by the front counter isn't being used because it leaks, no paper towels at the hand-washing sink in preparation area, backflow preventer at the mop sink leaks, dirty food containers were in clean storage, plastic containers were cracked and chipped, which can harbor bacteria. Next inspection: Dec. 22.
Saigon Oriental Restaurant, 1103 N. Broadway in Wichita — Four violations on Dec. 11 during an inspection that was a follow-up to an administrative order. A bucket of lettuce and bean sprouts weren't cold enough in refrigeration, chicken didn't cool down fast enough in refrigeration, "approximately a dozen dead co*ckroaches" in preparation and storage areas which can attract more bugs, living co*ckroaches were seen on a preparation table where onions and utensils are stored and they were also running under a chest freezer. Next inspection: Feb. 11.
